Belgian Waffles1 egg
2 c. All-purpose flour
¼ c. Vegetable oil
1 ½ c. Milk
3 Tbsp. Sugar
3 tsp. Baking Powder
¼ tsp Salt
1 tsp. Vanilla
In medium bowl, beat egg until frothy. Add remaining ingredients; mix until smooth. Add a heaping ½ cup batter to preheated waffle maker. Cook for approximately 5
to 6 minutes. Yield: 5 waffles. (I doubled it for our group.)
Buttermilk Syrup
Over medium heat, boil and stir for 1 minute:
1 cube Butter or Margarine
1 c. Sugar
½ c. Buttermilk
1 tsp. Karo syrup
Remove from heat and stir in:
½ tsp. Vanilla
½ tsp. Baking Soda
**We also topped the waffles with fresh strawberries, blueberries, peaches, bananas and whipped cream. Yum, Yum, Yum! **
Potato Hash12-15 small red potatoes quartered (boiled)
1/2 green pepper
1/2 red pepper
1/4 c. onion
1 Tbsp butter
1 Tbsp olive oil
1/4 c. Italian bacon (diced)
Italian Seasoning, Paprika, Salt & Pepper to taste
Saute onion and peppers in oil and better. Add potatoes, bacon and seasonings. Simmer 5-7 minutes or until flavors blend. Serve warm.

ReplyDeleteOne time just as a twist you should try Belgian waffles made with yeast to make them rise they are melt in your mouth yummy! The buttermilk syrup looks good too! Too bad my trip to see your beautiful city had to be postponed. :(
